21 Jun

Do you like freshly baked bread or cake with sweet essence? Even the thought of it is mouth watering. If you want to try this then malt flour and malt extract of Mahalaxmi Malt Extract - Malted milk food manufacturer -  can be the secret of your success. Malt flour is made from malted barley having high enzymes and nutritions. It is most commonly used in baking as when malt flour is added to hard wheat flour, it aids the Yeast fermentation. Starch in wheat flour is broken down into simple sugars or glucose.

Malt flour is highly nutritious as it is a good source of fibre, minerals and vitamins. Malt flour is available widely in major two types: Diastatic malt flour and Non-diastatic malt flour. The former is the type of flour which has been treated with enzymes or has active enzymes which increases the fermentation rate of the dough and adds flavour and colour to bread or bakery products. The latter is the flour that has not been treated with enzymes or doesn’t have active enzymes. This doesn’t increase the fermentation rate, they are only used for essence and flavour.

Why is barley malt flour a good choice?

1- High in Enzymes: Barley malt flour is high in enzymes which makes the end products lighter and fluffier.

2- High in Nutrients: Malt flour has high nutritious value and it is a good source of vitamins and minerals, such as zinc, iron and magnesium.

3-  Provides Flavour and Essence: Malt flour gives the bakery products a golden colour, sweet essence and strong flavour.

4- Low Gluten: Malt flour is comparatively low in gluten which makes it a perfect fir for health conscious people
